Our origins
Gambrinus — a story to be continued
On August 16, 1996, nearly a year after deciding to open Mauricie's first artisan brewery, Sophie Normandin and Marc Veillet finally saw their dream come true.
Conceived during a trip to Europe and born from a meeting with Daniel Longval, a brewer who worked out of his kitchen, Gambrinus opened as a small 35-seat restaurant-bar with about ten employees. Its defining feature: three beers brewed on the premises — a blonde, an amber and a dark.
It took a great deal of imagination to transform the old boarding house across from the university campus into a brewery. Over the years, the beers and the projects multiplied.
As Trois-Rivières fell in love with artisan products, we needed more space. We downsized the bar, transformed the gallery into a magnificent glass-enclosed space, opened the second floor divided into private lounges, and added a mezzanine — letting guests upstairs watch the performances on the stage below.
Today, Gambrinus employs 25 people, including a full-time brewer who crafts around thirty different beer recipes. We now have 150 seats inside plus 40 on the patio.
In addition to our delicious lunch menus, served every weekday from 12 PM to 2 PM, the chef also offers a constantly evolving dinner menu while keeping our greatest classics.
